BBT (Bacon, Basil & Tomato)

BBT (Bacon, Basil & Tomato)

BBT as made by The Cooking Lady

Ingredients
Artisan or French Bread
4-6 slices bacon
4 tbsp mayonnaise
2 good tomatoes
4-6 basil leaves

What To Do
Cut one inch circles from thin slices of  really good artisan bread or French bread.  I used a rosemary potato bread.  You want really firm bread!  Crumble 4-6 slices of very crisp bacon into 4 heaping tablespoons of very good mayonnaise.  Spoon onto bread rounds, top with finely diced tomatoes, sprinkle with kosher salt and cracked black, and top with a couple of fresh basil ribbons.

Basil Ribbons
Stack 4-6 fresh basil leaves, then gently roll up.  Slice very thinly and use as garnish.  Tasty!
