Broccoli Corn Bread

Ann Hollowell's Broccoli Cornbread from The Cooking Lady

Ingredients
2 boxes Jiffy Mix
1 stick butter
4 eggs
1 16 oz. container cottage cheese
1 cup fresh chopped broccoli
½ cup shredded cheddar cheese

What To Do
Melt butter in 8 x 8 casserole

Mix all other ingredients and pour into casserole

Bake 375 degrees until golden brown

    yes, can i use regular self rise corn meal mix.the same amount.it sounds great.THANK YOU

      I really wouldn’t substitute… the Jiffy mix comes premixed with sugar and the right amounts of baking soda and baking powder. I am however interested in experimentations. So if you do give this a try please let me know how it turns out.
