Cucumber Bites

Ingredients
White bread
Whole wheat bread
Good mayonnaise
Fresh cucumbers, scored on the outside, thinly sliced
Different fish roes, white, orange, black, red

What To Do
Cut fresh bread rounds using the smallest cutter you can find, about 1 ½ inch in size. Spread with mayonnaise and top with cucumber slices, then with fish roe.

On white bread, top with mayonnaise, then cucumber, top with black or red “caviar”, or roe. The black and red roes are very salty and delicious.

On wheat rounds, top with mayonnaise, a cucumber slice, and the orange roe, or masago—a roe used with sushi. If you’re near an Asian market, they usually have this in the freezer section, and it keeps forever.

Experiment with the colors and the tastes—Big Daddy didn’t like the ‘white” roe I found at the grocery store (and I didn’t either). He did like the masago, however, and it really was good.
