Catfish is Out of the Bag

 

I love catfish. I think it’s one of the best fish. It’s firm enough to hold up on the grill or in the saute pan but it flakes so well. It gets a bad wrap, but pond raised catfish is grain fed and sustainable.

We’re not going to post the recipe for sauteed catfish, because it’s so easy. Dredge the fillets in flour mixed with Creole seasoning. Heat canola oil and let them cook.

We did our catfish fillets with a fantastic Avocado & Bacon Salad. It’s got a fabulous lime dressing. I’m not sure why, but this is truly one of those salads that can only be made with one type of lettuce – Butter or Boston lettuce.

You know I love to roast my vegetables and Roasted Brussels Sprouts is one of my new, favorite things to do. They sweeten up perfectly. And, don’t throw out those leaves that crisp up… eat them too, they’re delicious.
