Catfish Piccata Made by The Cooking LadyI love U.S. Farm-Raised Catfish. It’s fabulous in so many ways for so many reasons. Beyond being healthy for you because it’s high in Omega-3 fatty acids and low in mercury. Beyond being a renewable resources that doesn’t lead to overfishing in our oceans. Beyond being locally grown right here in the South. It’s fantastic to cook with because it’s so mild and just screams for good sauces and spices. So to celebrate National Catfish Month I decided to create Catfish Piccata.

Bruschetta made by The Cooking LadyTo go along with it I raided my garden for some fabulous basil and I raided my farmers market for some fabulous Arkansas traveler tomatoes. Together they create a wonderful Bruschetta. And we had enough left over that I decided to throw in one of my favorite summer-time quick fixes… BBT’s (think of a BLT but exchange the L – lettuce – for a B – basil.) You’re going to love them both.

Now you’re not going to find a recipe on here for this week’s dessert because I made something quick and easy. Brownie bites from the store, chocolate gelato and a drizzle of your favorite coffee flavored liqueur. It’s decadent and delicious (and easily can be modified for the under-21 crowd.)BBT as made by The Cooking Lady
