Steamed Artichokes

Ingredients
4 artichokes
Juice of 2 lemons
Large Dutch oven,
Inch to two inches water in Dutch oven

What To Do
Trim stalk off bottom of each artichoke so it sits flat. Place in water in Dutch oven with lemon juice and cook at medium high heat until fork easily pierces the bottom of artichoke. Artichokes may be eaten hot or cold, pull each leaf off separately, and pull off the “meat” at the end of the leaf gently between your teeth. When all leaves have been pulled off and eaten, the heart is left. Remove the spiny looking leaves that are on top, and eat the remaining very soft heart.

Serve with melted butter and lemon or homemade mayonnaise.
