Catfish Tacos with Cilantro/Lime Sauce

Ann Hollowell's Catfish Taco on The Cooking Lady

Ingredients
4-6 large catfish fillets
Creole seasoning
Olive oil
Red cabbage, ½ head, finely shredded
Avocado slices
Linda’s Sauce (recipe follows)
Soft flour or corn tortillas

What To Do
Lightly season catfish fillets, and brown ever so lightly on medium heat in olive oil in heavy skillet. Set aside in 350 degree oven to keep warm.

Shred cabbage, make Linda’s Sauce, and put tacos together. Use at least one fillet per taco, cut in half or even crumble in tortilla, add shredded cabbage, a generous helping of Linda’s Sauce, and roll up. Delicious!!

Linda’s Sauce

Ingredients
1 cup sour cream
Juice of one lime
(zest of one lime, if desired)
½ cup mayonnaise, if desired
1 jalapeno, deseeded, ribs removed, and very finely diced
¼ cup chopped fresh cilantro

What To Do
Mix all of the above and chill very well. Can be made well ahead of time to allow flavors to blend.
