I wanted to have a friend to lunch and I really wanted to have something simple, when I looked in the fridge I had two portobello mushrooms. Mushrooms for Lunch was born, and what a fantastic idea!

Put the mushrooms in a pan, turn on the heat and pour some balsamic vinegar over the top. Let them cook low and slow and if you’re daring add a couple grape tomatoes to the pan to caramelize.

My husband won’t have a sandwich without some meat, so for him I added a piece of boneless, skinless thigh marinated with a fabulous citrus marinade.

And the plate needed a pop so I made Confetti Corn Salad… easy and fantastic.

    I just watched this presentation on PBS and I am starving!! I can’t wait to make this meal – especially the corn salad. Thanks for yummy summer suggestions.
